Pocket bread/wraps

3 cups of flour (we use 1/2 normal and 1/2 wholemeal)
1 1/2tsp dry yeast
1tsp salt
2tsp sugar
1tab oil
1cup warm water

Ok put all the dry ingredients in a bowl.  Mix.  Slowly add oil and water and knead for about 10 min by hand or 5min in a mixer if you are lucky enough to have one.  I do.  Thanks Dad XOXOX
Slightly oil the bowl and dough, cover and leave to rise for 1hr.
After an hour take our the dough and knead slightly.  Divide into 8 equally and roll each into a round flat.  Make them thin but not too thin.  They should be about 15-20cm round.
Set aside for about 30min to rise again.  I roll them out on the table and just leave them there,
You can either cook them in the oven:preheat oven to 250C and lay 2 at a time on the wire racks and cook for 4-5min until puffy and slightly browned.  If they get too brown they will  be crunchy.  Or you can cook them in the bbq if you have one with a hood.  Preheat bbq with the hood down and proceed as for the oven except on the bbq they get delicious grill marks.
When cooked remove and cover with a tea towel.

Baggettes

5-6cups of flour
3tsp yeast
2tsp salt
1 tab sugar
2 cups warm water
cornmeal

Place 2cups of flour, yeast, salt and sugar in a bowl, stir in water.  Beat.  Mix in rest of the flour.  You may not need the full 6 cups or you may need a little more, it depends on the weather and your flour.
Knead for around 10min until soft and pliable.  Cover and leave to raise intil its double.
Punch down and divide into 2 for 2 long ones (make sure that it will fit in your oven!!)/8 for individual ones/16 for smaller sized ones.  Lightly flour bench, cover and leave for 10min. 
Roll into a rectangle about 1cm thick and roll up legthways so the roll is long and seal with a little water. 
Keeping the seem to the bottom place lightly in some cornmeal and then on a baking sheet.  Leave room for them to rise.  Brush with water.  Cover and let rise for 40min.
With a very sharp knife make slashes across the top.
Bake in a 190C preheated oven for 20min.  Remove and brush with water and return for a further 15-20min.

Quick Rise Dough

4 cups flour
4tsp yeast
1tsp salt
1tab sugar
4tabs oil
warm water

In a large bowl mix together flour, yeast, salt and sugar.  Add oil and about 1cup of warm water.  Stir and add more warm water until you make a dough.  Take out of bowl and knead for 10min.  roll in to desired shape, drozzle with oil and cover for 15min.  Bake in a preheated 190C until done.  Time varies due to the size of the item.
